Recipe of the Month: 5-Ingredient Lemon Yogurt Marinated Grilled Chicken Breasts

An easy, flavorful lemon and yogurt marinated grilled chicken recipe that keeps the chicken juicy and flavorful! Try it on top of rice, a salad, with veggies or stuffed in a pita!

  • Juice of 1/2 large lemon

  • 1 tablespoon olive oil

  • 1/2 cup plain greek yogurt

  • 1 1/4 teaspoons Mediterranean spiced sea salt (*or your own homemade blend -- see notes)

  • 1 1/4 pounds chicken breasts (about 5 - small 4 oz chicken breasts)

  1. In a bowl, combine the lemon juice, olive oil, yogurt and mediterranean spiced sea salt and stir. Add the chicken breasts and stir so that the chicken is covered in the marinade. Place in the refrigerator for 20 minutes (or up to an hour).

  2. Preheat grill to medium high and lightly oil the grate.

  3. Shake off extra marinade on the chicken and place on grill, cooking 6-8 minutes per side, until juices run clear and chicken in no longer pink. Season with black pepper and salt, to taste. Discard the excess marinade.

  4. Serve with salad, potatoes or anything of your choice!

To zest up the chicken: I like to add in 2 cloves of minced garlic + 1 teaspoon of dijon mustard to the marinade. Seriously so good!

To create your own Mediterranean Sea Salt for this recipe, combine the following: 1 teaspoon dried oregano, 1/4 teaspoon garlic powder, 1/4 teaspoon dried thyme, 1/2 teaspoon sea salt, pinch of dried basil and freshly ground black pepper.

Some people like to grill up a few lemon slices with my chicken to add flavor (they are also edible)!
